So Septina and I were talking earlier and I realized that a HUGE portion of our community are grown adults out living on their own. As a stay at home dad, I'm always looking for something that isn't Macaroni and Cheese to make and figured we could share stuff here! I'll get us started with my son's (and Kuso's) favorite - Polish Sausage Soup!

2 tablespoons butter
1 1/2 lbs lean fresh kielbasa or 1 1/2 lbs smoked kielbasa, sliced (regular spicy ground sausage also works but makes the soup take on more of a chilli texture.)
1 cup chopped onion
2 cups chopped celery
4 cups shredded cabbage
2 cups sliced carrots
1 bay leaf
1/2 teaspoon dried thyme
2 tablespoons white vinegar
3 cups beef broth
2 cups water
3 cups peeled and cubed potatoes
salt and pepper and chilli powder



Melt butter in skillet, add sausage, onions, celery. brown sausages lightly. Pour into a soup pot and add everything else except potatoes. Bring to a boil, reduce heat, cover and simmer for 1 hour. (or cook in crock pot) Add potatoes and cook until potatoes are tender. Season with salt and pepper. Chilli powder to taste.

I've been doing more and more cooking lately, learning as I go, and I'm all up to learn about some new recipes I might have not thought about. I'll have to try your Polish Sausage Soup, it sounds good! I especially like using my slow cooker. I have to throw a bunch of ingredients in a pot, set it to cook, and the instructions specifically state not to disturb until done? Sold! :D

On my end, I like eating meatballs, but no one in the family seems to be preparing them. As such, I ended up making my own recipe, based on some instructions I found I-don't-know-where-anymore. This is designed to be prepared in a slow cooker. Please excuse any translation mistakes!


Meatballs ingredients:
1 lb of lean minced meat
2 onions chopped small
3/4 cup of bread crumbs
2 eggs
2 teaspoons of parsley
2 teaspoons of thyme
Salt and pepper

Sauce ingredients:
1 cup of chili sauce
A few drops of lemon juice
1/2 cup of brown sugar
1 cup of water
2 teaspoons of soy sauce
3 teaspoons of mustard powder

Recipe:
1- Mix all ingredients for the meatballs. Shape them (about 1.5 inch in diameter) and place them one by one at the bottom of the slow cooker.
2- In a bowl, mix all sauce ingredients and pour over the meatballs.
3- Cook on low for about 6 hours and a half.

Hey Wind, I tried the soup this weekend. Was really good and my daughter seemed to like it as well. I will try posting a couple recipes my daughter and I like soon, but I am a baker more than a cook so, may just end up putting a few baking recipes on here instead.

Minced meat creamy shells

Found in one of my grandmother's cooking books, published in 1978. The minced meat used here can be beef, pork or chicken at your leisure: I made my latest batch with chicken. Makes 6 servings.


Ingredients:
1 cup of small pasta shells, uncooked
3/4 cup of cream cheese, softened
1 pound of minced meat
1 can (14 ounces) of tomato sauce
1 teaspoon of granulated sugar
2 medium onions, sliced
4 tablespoons of butter
1 egg
1 cup of sour cream
Salt & pepper to taste


Steps:
1- Cook the pasta shells according to instructions, then drain well. Incorporate cream cheese and place in an oven-proof glass dish.
2- Shape the minced meat in a large patty and brown it in two tablespoons of butter, 5 minutes on each side, then break into small chunks.
3- Add the tomato sauce, sugar and salt & pepper, then mix with the shells.
4- Caramelize the onions in a pan, then add on top of the mix previously obtained.
5- Beat the egg lightly, mix in the sour cream and spread over the onions.
6- Cook in oven for 40-45 minutes at 350 F.


Result: yummy!

Don't know if your big on seafood, but I know a shrimp and noodle pasta salad.

2 Tspn Salt
1 Tspn Black Pepper
1 Red Pepper
3 Celery Sticks
1 Bag 'No Yolk' Noodles
2 Cups Heavy Cream
1/2 Cup Jack Cheese
1/2 Cup Blue Cheese
1 Bag of Precooked shrimp


Cook Noodles until El dente, shock the noodles in cold water and let drip. In a bowl add the Heavy Cream
The cheeses, salt and pepper. Dice the celery and Red pepper to less the size of a penny. Add the Noodles and cheese and shrimp into a serving dish, stir and serve.

I have so many recipes to share, I kid you not. My stronger points are sauces for sure.

Something My daughter and I really enjoy are what I call Sausage Poofs. (aka sausage gravy biscuit to go)

2x 1 lb cream cheese
1 lb breakfast sausage
2 cans large Grands biscuits


Preheat oven to 350 degrees

Cook sausage in frying pan until brown, drain well. Add cream cheese and mix until cream cheese melts and covers sausage well. Flatten biscuits and cut each one into quarters. Use a spoon to fill each quarter biscuit and pinch the biscuit closed around the filling.

Cook for about 12-15 minutes until biscuit is golden brown. Let cool and enjoy.

Prep time = approximately 1 hour

One of the recent BBQ sauces I made was for ribs. Specifically designed for ribs.

Smokey Tabasco = adjust to your own liking
Fresh Ground Garlic 2 1/2 tablespoon
3 cups ketchup
1/3 cup honey Dijon mustard
1 tablespoon onion powder
1 tablespoon cumin
1/2 table spoon Black pepper
1/2 table spoon Salt

In a hot sauté pan, water test it. If the Water dances and sings, it's ready. Add sauce quickly, stir immediately, still awesome if the bottom gets burnt, adds more smokiness to the taste.

ONE caution though, Do Not stay on heat for more that 30 seconds. You will kill the sauce, therefore ruining it. This is one of the sauces that requires precise timing. If you pull it off, Lightly base the sauce on, every turn of the meat.

I really want to try all these recipes posted. x.x and I shall. I just hate cooking when I come home from work. Here is one that I have had grave success with. My family loved it (and my dad hates anything vegetarian), my co-workers liked it, etc etc.

These are Vegetarian Meatballs

For the meatballs:
4 eggs
1 cup shredded Cheddar cheese (or any cheese)
1/2 cup cottage cheese
1/2 cup finely chopped onion
1 cup finely chopped walnuts
1 teaspoon dried basil
1 1/2 teaspoons sea salt
1/4 teaspoon dried oregano
2 cups Italian seasoned bread crumbs
(I usually end up mixing Italian seasoning with normal bread crumbs because I don't have any other use for Italian bread crumbs).

Sauce:
1/4 cup plain greek yogurt (can be subbed with vegetable oil but the yogurt makes the sauce thicker and healthier)
1/4 cup white vinegar
3/4 cup apricot jam
1 cup ketchup
1/4 cup minced onion
1 teaspoon dried oregano
1 dash sriracha sauce (or more if you like it hot)


Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.
In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.
Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.

I actually got this recipe online but I used substitutes to make it healthier/what I had on hand.

At Link's request, here's another of my recipes. This one is based on something found in a cookbook I have at home, modified to work in a slow cooker.


Cranberries and maple chicken / pork

Ingredients:
4 boneless chicken breasts OR ~1 kg (2.2 lb) worth of boneless pork loins
500 mL (2 cups) of fresh or frozen cranberries OR 348 mL (12 oz) of whole fruit canned cranberry sauce
250 mL (1 cup) of apple juice
200 mL (3/4 cup) of maple syrup
1 large onion, diced small
1 tablespoon of thyme, crushed
Salt and pepper to taste


Steps:
1- Throw everything in the slow cooker, mix well.
2- Set to cook on low for 8 hours.
3- Enjoy!

These are a triple-stacked dessert consisting of a first layer of chocolate, graham wafers and coconut, a second one of cream and custard, then a topping of chocolate.

I've tried before to make one with a random recipe, but I've got much better results by using the exact one from the namesake city of Nanaimo.

How in the WORLD did I forget about this topic.

Check this out, guys. You know how when you make any kind of fried chicken it's really hard to get the right flavor balance for the breading? Like it either turns out with no flavor or way too overpowering in saltiness or spiciness? Well I got something for you. You can scale this down; this is the size batch I usually make so that we have it on hand and don't have to make it all the time - you can totally scale it down.

6.25 pounds flour
1 cup lawrys seasoning salt
1 cup paprika
1 cup pepper

Mix the holy hell out of it. That's it. You can tweak as desired, but it carries a very light spice and salt with it so it won't offend anyone, but the flavor is definitely there.

If you want to get the most out of it and get it nice and crispy, before you fry, broil or fan-fry it, take the chicken and dip it in an egg-wash (approx 70% egg, 30% milk) and then put it in the breading. Repeat one additional time if you like your chicken crispy enough that it's audible from the neighbor's house.

INGREDIENTS

6oz. Dark chocolate
6oz. Butter = 1 1/2 sticks
4 Eggs
1.5oz Sugar (I went with 2oz)
2oz. Flour = 1/4 cup

METHOD

Melt the chocolate and butter
Mix the eggs and sugar and whisk for a few minutes, then add flour
Add the egg mix to the melted chocolate and mix
Pour the mix in greased mold
Bake directly in the oven at 390F for 14 minutes

can garnish with powdered sugar and serve with vanilla ice cream. Nom.

The weird thing is when the cakes are put in the fridge, the texture is almost like ice cream when chilled. o_o
