I'm looking for really cool, long-term (not novelty) mods, especially ones that add immersion. Suggest some fun ones here! I'll add ones that I really like, and I have a few to hunt down yet. Bare in mind that some of these will be NSFW, and a warning will be attached to those.

Better Followers - This mod fixes weird things, like people defaulting to 2h swords when they use 1h axes better, or simply using the armor with the highest armor rating as opposed to what properly suits their particular stats. http://www.nexusmods.com/skyrim/mods/7554/?

Bluecreek Estate - This mod adds a cool property you can buy. Just my personal favorite of all of them I've tried. http://www.nexusmods.com/skyrim/mods/22496/?

Caliente's Body Mod - Makes the women look a little less like men and a little more like a 14 year old's fantasy. http://www.nexusmods.com/skyrim/mods/2666/?

Cloaks of Skyrim - Adds cloaks to the game. http://www.nexusmods.com/skyrim/mods/12092/?

Convenient Horses - adds better mounted combat, horse trample, horse calls, follower horses, ability to loot and speak while mounted, etc. http://www.nexusmods.com/skyrim/mods/14950/?

Duel Combat Realism - Enforces the need to use tactics in combat. MUCH better AI for all enemies and NPCs. Enemy AI uses teamwork to flank, flush, hide, etc. http://www.nexusmods.com/skyrim/mods/2700/?

Immersive Armors - Batshit amounts of craftable and lootable armors using all sorts of materials which go above, below and between existing levels of armor. http://www.nexusmods.com/skyrim/mods/19733/?
Immersive Weapons - Batshit amounts of craftable and lootable weapons using all sorts of materials which go above, below and between existing levels of weapons. Adds a few new weapon types such as bo staffs and spears. http://www.nexusmods.com/skyrim/mods/27644/?

Immersive Patrols - Makes patrols larger, adds patrols of factions moving through their territory. http://www.nexusmods.com/skyrim/mods/12977/?

INIGO - http://www.nexusmods.com/skyrim/mods/40960/? This is a khajit follower who's very well done, has his own voice actor, personality, tons of dialogue and a few custom AI settings. My favorite follower so far.

Immersive Creatures - Adds dozens of new creatures and variants of existing creatures to the game. http://www.nexusmods.com/skyrim/mods/24913/?

SKYUI - makes the game WAY more PC friendly in it's interface. http://www.nexusmods.com/skyrim/mods/3863/?

Skyrim Script Extender (SKSE) - Allows for modding of mods and other things that I don't understand. http://skse.silverlock.org/

Ultimate Follower Overhaul - Allows you to change follower's default equipment, allow followers to use spell / skill books, make followers forget spells, display stats, adjust follower to your current level, allows you to have more followers and lots more. http://www.nexusmods.com/skyrim/mods/14037/?

Nude Females - This isn't for the reason you might think. Obviously this one is NSFW. However, I hate taking skimpy armor off females only for them to grow underwear. It kills the immersion for me. I'm not posting a link to this one, but you're welcome to look it up on Skyrim Nexus - it's by Thepal.

Nude Males - Same reason as the Nude Females mod. I personally use the FavoredSoulMEshes - FlaccidVersion. In addition to removing underwear, it also improves lips, dirty faces and scars. Once again, not posting a link to a NSFW mod.

SkyTEST Realistic animals and Predators - More animal spawn points, animals seek mates, bears hibernate in winter, animals search for water holes once per day, predators hunt 2-3 times per day, often provide extra meat. Prey / ambient animals hunt flora. Animals have unique personalities, often travel in much larger packs or herds. Much more. http://www.nexusmods.com/skyrim/mods/10175/?

Inconsequential NPCs- Adds a plethora of pointless NPCs to more fully populate the world. http://www.nexusmods.com/skyrim/mods/36334/?

Audio Overhaul for Skyrim 2 - Uses more real life and less 'gamey' audio for immersion http://www.nexusmods.com/skyrim/mods/43773/?

Realistic Ragdolls and Force - Causes bodies to behave much more realistically when hit or downed. http://www.nexusmods.com/skyrim/mods/601/?

Animated Clutter - Items like bags, barrels, trap doors, cages etc. have opening and closing animations and noises. http://www.nexusmods.com/skyrim/mods/48287/?

You already have Immersive Armors, so you already have the Dragon Knight Armor, so I can't recommend you that. :V It's an armor I commissioned Hothtrooper to make, and it cost quite a pretty penny, too. It was included in Immersive Armors in the latest update, but it still has a standalone version on the Nexus. Yes, that means you need to use it. ._.

You have UFO... there are better follower framework mods, but I use UFO myself due to a companion compatibility issue. Just know that there are other, more updated and more streamlined mods for that like Amazing Follower Tweaks.

Immersive Creatures and SkyTEST has an integration mod that gets Immersive Creatures additions to use the same AI tweaks as SkyTEST. You'll have to do some load order tweaking to get it to work though. http://www.nexusmods.com/skyrim/mods/46495

There are three SkyProc patcher mods that I use to help with immersion. They are ASIS, Automatic Variants, and Lootification. ASIS will adjust NPC AI and perks and spells, making for more dangerous and more intelligent opponents. Automatic Variants lets you download texture/model packs to make it so you're not encountering clones of the same creature over and over--dogs, wolves, trolls, mammoths, falmer, etc. can all have varied looks. You can also use the patcher to set up which ones will appear and which ones won't ahead of time. Lootification will automatically apply the base game enchantments to mod-added equipment, so you can find items from like Immersive Weapons with enchantments, rather than finding only base game items. Look through the descriptions for additional stuff, like Lootification XML lists and such. You'll also want SkyProc Unified Manager to handle it all at once.

Arthmoor has some nice additions to the game. There's Ars Metallica, which is an adjustment to smithing in the game, so you can get smithing EXP for more than just making an item--you can get it from smelting items down and such, and now you can smelt weapons and armor into raw ingots. He's also got Cutting Room Floor, which restores cut/orphaned content from the original game. He also has Run For Your Lives and When Vampires Attack, which make it so that townsfolk will head for the shelter of their homes or the nearest inn in the case of a dragon attack or vampire attack, respectively. Very useful, so that noncombatants won't get massacred by them because they constantly try to fight off the menace. Gildergreen Regrown alters the Gildergreen quest so that if you go for the new sapling route, the sapling will eventually grow into a fully-fledged tree. The Paarthurnax Dilemma lets you make the Blades fall in line with your decision to spare Paarthurnax, which frankly they already owe you, being sworn to follow Dragonborns and all. All of Arthmoor's stuff is compatible with the Unofficial Patches, which I daresay you have.

Touring Carriages is exactly how it sounds. Now when you hire a carriage, you get a scenic view of the trip, complete with regional dialogue, rather than fast travel. Up to three followers can join you, you can talk to the driver mid-trip, and nap to initiate original fast travel, plus other features.

There's the Bandolier mod, which adds equippable accessories like belt bags and stuff to add to your character's appearance. Also has expansions to give them to NPCs at large, balance adjustments, etc.

Dovahkiin Relaxes Too gives you a power you can use to make your character relax, have a drink, hug their spouse, sit down, etc. Neat to have when you need to idle or want to take slice of life screenshots and such.

If you can get past Apollodown's sense of humor, there's Dragon Combat Overhaul, which uses scripts to make dragons into a true menace. Use at your own risk. He also has Civil War Overhaul, which turns the Civil War quest into a dynamic experience, where you can lose holds and even the entire war if you're not careful. Plus a bunch of other overhaul mods.

Expanded Jewelry Crafting adds loads more jewelry to the game for you to make, based off of the in-game materials. All fully enchantable. Plus a few super-expensive others with special effects, as easter eggs. Also has a leveled list version so you can encounter them elsewhere.

RS Children makes the children in the game look unique, rather than the clones BethSoft came up with, which thankfully averts the awkward implication that is vanilla Braith.

Edhelsereg has a three-pack of mods focusing on the dragon priests. Konahrik's Accoutrements - Dragon Priest Armory adds armors that go with the Dragon Priest masks you find in the game, Konahrik's Privilege adds special effects to the Konahrik mask based on your meditated Shout word from Paarthurnax, and Dragon Priests Enhanced, which turns the masked Dragon Priests into formidable opponents.

Slower Companions Advancement Remade will make it so you have to do more work to advance in standing with the Companions, so you're not going from rookie to leader in the space of four quests. Immersive College of Winterhold similarly revamps the faction.

That's all for now. Lemme know if you're after more suggestions; I'm sure there's way more I can give you.
