I am translating a game...and I have this problem...

When I use a hex editor on the japanese rom,instead of gettin kana or kanji,I got this weird ASCII characters instead. How do I know which ASCII character is the kana word in the game?

Examples of the ASCII characters are ÀŸØ!@

How do I know which ASCII character is which kana or kanji character?? I gotta know ASAP,I am gonna translate a game.
